ἄν: is repeated in the following φαίεν ἄν.—

ἄνθρωποι οἱ λέγοντες: cf. 337 c ἡμεῖς οἱ ἀκούοντες, ἄνδρες οἱ παρόντες.

αὖ ἀγαθὰ ἀνιαρά: cf. 353 c πονηρὰ . . . εἶναι.

καύσεων κτἑ.: i.e. all forms of the healing art, surgery, medicine, diet.

λιμοκτονιῶν: hunger cure. Galen, 15, p. 829 K., explains it as ἀσιτία παντελής, or at least ἐπὶ τοῖς πόμασι μόνοις δίαιτα a diet of drinks only.
